Blue Moon Grill in Wakefield - any of their pancakes are awesome - the butterscotch pancakes first come to mind!

Delux Town Diner in Watertown, MA because they have jonny cakes which are better than pancakes any day. At least if you grew up as a Swamp Yankee in the deep woods of Southern Rhode Island.
For traditional pancakes, I've never found any that were better than Glen Junction Restaurant in Glen, NH. A bit of a drive from Boston but the pancakes are simply out of this world.
