Red's in Salem, Ma
Blue Moon Grill in Wakefield - any of their pancakes are awesome - the butterscotch pancakes first come to mind!
The Friendly Toast - It's all about the King Cakes. They are Elvis theemed banana and PB chocolate chip pancakes.
La Galleria 33! Best brunch in town!

For traditional pancakes, I've never found any that were better than Glen Junction Restaurant in Glen, NH. A bit of a drive from Boston but the pancakes are simply out of this world.
